Pastelón

Made this recipe when some plantains sat on my counter for too long. Was missing a few ingredients for a traditional pastelón and had a few extra items to add. It was still delicious!

Pastelón is a Puerto Rican dish. The dish is also a staple in the cuisine of the Dominican Republic and prepared differently from the original recipe of Puerto Rico.

Ingredients

  • 4 ripe plaintains, peeled

  • 1/3 lb. 85/15 Ground beef 

  • 1/2 lb. Ground turkey, preferably organic

  • 1 small yellow onion, diced

  • 2 cloves garlic, minced

  • 6 oz. Tomato sauce

  • 1/2 packet sazon 

  • 1 T. Adobo seasoning 

  • 1 1/2 t. Cumin seed

  • 1-2 T. Apple cider vinegar

  • 1 c. Mozzarella cheese, shredded 

  • Optional mashed yuca topping _ yuca mashed with cream, sharp cheddar, salt and pepper

Instructions

  1. Brown the meat in a bit of oil

  2. Add onion and garlic, cook 1-2 minutes

  3. Add spices, cook 1 minute

  4. Add tomato sauce and vinegar, stir and set to low to simmer while you move on to the plantains

  5. Slice plantains in half lengthwise, and then each half in half again so you have four long planks  

  6. Get a 9x9 baking dish and put it next to the stove

  7. Heat a generous amount of canola oil in a large skillet, and working in batches, fry the plantains - adding more oil as needed

  8. As you are done with a batch, put them in the 9x9 pan - layering plantains, meat, and cheese until you've run out of everything

  9. Bake uncovered at 350 degrees for 20 minutes until bubbling

  10. Broil for 5 minutes

  11. Serve warm
