Rainbow Quinoa Salad
Originally inspired by the Quinoa Salad at Rustic Bakery.

Ingredients
Salad
1 cup lettuce, romaine, red leaf, any kind you like
1 cup purple cabbage, okay to sub green
1/2 cup tri-color quinoa, cooked
1/2 cup shelled edamame
1/2 red bell pepper, diced
1/2 avocado, diced
1/2 cup almonds, slivered or marcona*
Mint
Cilantro
Rustic Bakery Crackers optional, but highly recommend
Dressing
2 tsp. soy sauce
2 Tbsp. lime juice
1 Tbsp. ginger
1 Tbsp. white miso
1 Tbsp. avocado oil
1 tsp. sesame oil
Instructions
Mix or blend dressing ingredients well.
Assemble salad, mix well, and enjoy :)
I love to use the rustic bakery crackers on the side like a spoon dipper. YUM!
Notes
* If used marcona, give them a rough chop
