Ingredients

  • Salad

  • 1 cup lettuce, romaine, red leaf, any kind you like

  • 1 cup purple cabbage, okay to sub green

  • 1/2 cup tri-color quinoa, cooked

  • 1/2 cup shelled edamame

  • 1/2 red bell pepper, diced

  • 1/2 avocado, diced

  • 1/2 cup almonds, slivered or marcona*

  • Mint

  • Cilantro

  • Rustic Bakery Crackers optional, but highly recommend

  • Dressing

  • 2 tsp. soy sauce

  • 2 Tbsp. lime juice

  • 1 Tbsp. ginger

  • 1 Tbsp. white miso

  • 1 Tbsp. avocado oil

  • 1 tsp. sesame oil

Instructions

  1. Mix or blend dressing ingredients well.

  2. Assemble salad, mix well, and enjoy :)

  3. I love to use the rustic bakery crackers on the side like a spoon dipper. YUM!

* If used marcona, give them a rough chop
