Ingredients

  • 3 T. butter
  • 3 T. all-purpose flour
  • 1-1/2 t. salt
  • 1/8 t. pepper
  • 2 c. 2% milk
  • 1 c. (4 ounces) shredded cheddar cheese
  • 5 c. thinly sliced peeled potatoes (about 6 medium)
  • 1/2 c. chopped onion

Instructions

  1. Preheat oven to 350°.
  2. In a large saucepan, melt butter over low heat.
  3. Stir in flour, salt and pepper until smooth.
  4. Gradually add milk.
  5. Bring to a boil; cook and stir 2 minutes or until thickened.
  6. Remove from heat; stir in cheese until melted.
  7. Add potatoes and onion.
  8. Transfer to a greased 2-qt.
  9. baking dish.
  10. Cover and bake 1 hour.
  11. Uncover; bake 30-40 minutes or until the potatoes are tender.
  12. Yield: 6-8 servings.
