Ingredients

  • 1 12oz package of uncooked spinach fettuccini (I use the Al Dente Fiesta Fettuccini from Whole Foods)
  • 6 ozs. cooked extra lean ham slices 2" x 1/4" strips
  • 1 medium red onion thinly sliced, separate into rings
  • 6 c. fresh spinach, cut into 3" x 1/4" strips
  • 6 ozs. lowfat mozarella cheese cut into 2" x 1/4" strips
  • Dressing: (Combine and shake well in a jar)
  • 1/2 c. white wine vinegar (I use seasoned rice vinegar)
  • 2 T lemon juice
  • 2 T olive oil
  • 2 T water
  • 1/2 c. chopped fresh basil
  • 2 minced garlic cloves
  • 1/2 t. salt and pepper

Instructions

  1. Cook noodles al dente.
  2. Drain and rinse with cool water.
  3. Toss ingredients in a large bowl then pour drained noodles, pour dressing and toss to coat.
