Ingredients

  • 2 skinless, boneless chicken breasts (or a store bought roasted chicken)
  • (cooked and shredded)
  • 2 (14.5 oz) cans chicken broth (or 1 large can)
  • 1 c. chunky salsa (good quality!)
  • 1 T. lemon juice
  • 1 c. frozen corn kernels
  • 2 tsp taco seasoning (can use store bought or homemade)
  • Homemade taco mix: (makes a lot more than 2 tsp!)
  • 1 T. chili powder, 1/4 tsp garlic powder,
  • 1/4 tsp onion powder, 1/4 tsp crushed red pepper flakes,
  • 1/4 tsp dried oregano, 1/2 tsp paprika, 1 tsp ground cumin,
  • 1 tsp sea salt, 1 tsp black pepper
  • Shredded Monterey Jack Cheese and sour cream

Instructions

  1. Directions: In a large pot mix everything together.
  2. Simmer for about 20 to 30 minutes.
  3. Serve in bowls with tortilla strips (or broken chips).
  4. Top with Monterey Jack cheese and a little sour cream.
