Ingredients

  • 1 c. onion (and/or leeks)
  • 1 c. celery, diced
  • Chicken stock
  • leftover turkey bones and meat
  • 1 can Cream of Chicken soup
  • 1/2 lb. medium egg noodles
  • Frozen peas

Instructions

  1. Chop onion and celery and saute it in a little olive oil.
  2. Add enough chicken stock (and/or water) to cover turkey bones.
  3. Gently simmer until most of the turkey meat falls off of the bones.
  4. Remove bones. Remove any excess meat from the bones and add it to the soup pot.
  5. Cool broth and skim any fat off of the top.
  6. Re-heat and blend in 1 can of Campbell's cream of chicken soup (fat free).
  7. Add medium egg noodles and cook until just done. (Don't overdo it or it will be mushy).
  8. Serve immediately with green peas sprinkled on top.

    I often make it for my grandson. Indigo who really loves it, so I use a rotisserie chicken. I think he could eat it every day.
