Ingredients

  • 2 c. (1 pint) huckleberries
  • 1 c. water
  • 1/2 c. sugar
  • 1/4 t. salt
  • 1 T. cornstarch
  • 2 T. water
  • 1 T. butter

Instructions

  1. Bring hucks, water sugar and salt to a simmer.
  2. Simmer 20-30 minutes, mashing hucks slightly with a potato masher.
  3. Mix the cornstarch and water and then remove hot mixture from stove and add it in. Add 1 T. butter.
  4. Voila!

Yield is about 2 cups.
