Ingredients
1 C. Flour
1 C. Kodiak Power Cakes mix
2 t. Baking Powder
3 Tbsp. Sugar
1/2 t. Salt
1/2 t. Baking Soda
1/4 C. frozen butter, grated
1 1/4 C. Greek yogurt (Chobani less sugar - two container)
Fresh blueberries
Instructions
- Preheat over to 350°
- In a large bowl, beat together first 6 ingredients until butter is the size of small peas.
- Beat in the yogurt until dry ingredients are just blended. Do not overmix.
- Gently fold in blueberries.
- Using a medium size ice cream scoop (or your hands), drop scones on cookie sheet about 1 1/2 inches apart.
- Sprinkle top with sugar or cinnamon or salt.
- Bake 17-20 minutes or until golden brown.

My favorites are lemon, apricot habanero, or bacon and cheddar!
