Ingredients

  • 1 C. Flour

  • 1 C. Kodiak Power Cakes mix

  • 2 t. Baking Powder

  • 3 Tbsp. Sugar

  • 1/2 t. Salt

  • 1/2 t. Baking Soda

  • 1/4 C. frozen butter, grated

  • 1 1/4 C. Greek yogurt (Chobani less sugar - two container)

  • Fresh blueberries

Instructions

  1. Preheat over to 350°
  2. In a large bowl, beat together first 6 ingredients until butter is the size of small peas.
  3. Beat in the yogurt until dry ingredients are just blended. Do not overmix.
  4. Gently fold in blueberries.
  5. Using a medium size ice cream scoop (or your hands), drop scones on cookie sheet about 1 1/2 inches apart.
  6. Sprinkle top with sugar or cinnamon or salt.
  7. Bake 17-20 minutes or until golden brown.

My favorites are lemon, apricot habanero, or bacon and cheddar!
