Ingredients
- 1 lb Pinto Beans
- 1 lrg onion chopped coarsely
- 3-4 cloves of garlic – minced or crushed
- ½ tsp ground black pepper
- 15-20 drops of Tobasco sauce
- 4-6 oz tomato juice
- 1-2 green peppers – cut bite size
- ½ lb salt pork or small Boston Butt or pork shoulder

Instructions
- Wash beans well and drain.
- Cover well with water and soak for 3-6 hours or overnight.
- Par-boil approximately 3 hours with plenty of water.
- Add all other ingredients (meat included) and simmer for 5-6 hours.
- Remove meat with any bones and fat and return meat to pot & serve.
