Ingredients

  • 1 lb Pinto Beans
  • 1 lrg onion chopped coarsely
  • 3-4 cloves of garlic – minced or crushed
  • ½ tsp ground black pepper
  • 15-20 drops of Tobasco sauce
  • 4-6 oz tomato juice
  • 1-2 green peppers – cut bite size
  • ½ lb salt pork or small Boston Butt or pork shoulder
  • Array

Instructions

  1. Wash beans well and drain.
  2. Cover well with water and soak for 3-6 hours or overnight.
  3. Par-boil approximately 3 hours with plenty of water.
  4. Add all other ingredients (meat included) and simmer for 5-6 hours.
  5. Remove meat with any bones and fat and return meat to pot & serve.
